I'd wait to change until after you've gone through the entire story. Since you started at GLD, I 'm thinking you want to become a PLD (paladin). I had to level my PGL to 30 and LNC to 15, then the job quest line opened up for me. You will need to figure out which Job you want. You may start as a GLD, but later decide you want to be a damage dealer - LNC (lancer), ARC (archer), ACN (arcanist), PGL (pugilist), etc., or healer class. You can choose to do this or not - it's up to you how you want to play the game - but you also have the option to join a Free Company (FC) which are groups of people who help each other out. Here's a link I found that had some good information about crafting (spf botany, mining, carpentry and armorer): Disciples of the Hand and/or Disciples of the Land. Once you hit level 10, you can also choose a crafting or gathering classes. I can't remember at what level we unlock the Hunting Log (maybe 5), but that is also a good way to earn exp. Use the 'shout' chat to look for fate parties & most often, you'll get invited. If you've gone through those, then you can go out and begin doing some fates.

There should be exclamation point bubbles that popped up around Ul'dah. The next class quest you can unlock is at lvl 10 (I think I read in another thread you were lvl 9).
